Sugar free oatmeal cookies

These Sugar Free Oatmeal Cookies are chewy thanks to oats and flaxseed, and have a sweet pop of nuts and dried fruit. They prove that it is possible to avoid sugar and still bake cookies!

Instructions

  • Preheat oven to 350 degrees F, line large baking sheet with unbleached parchment paper and spray with cooking spray.

  • In a small bowl, whisk flaxseed and water. Let sit for about 10 minutes while you are getting other ingredients ready.

  • In a large bowl, mash bananas. Add coconut oil, vanilla extract, cinnamon, baking soda and salt. Add flaxseed mixture and whisk really well.

  • Add oats and oat flour; stir to combine. Add nuts and dried fruit; mix well. Dough will be very thick.

  • Using large ice cream scoop, place batter on previously prepared sheet and flatten with the back of a scoop into large size cookies. Cookies do not spread. I had about 6 cookies per sheet. Bake in batches for 20 minutes or until nuts start to brown a bit.

  • Remove from the oven and let cookies cool for a minute, then transfer onto a cooling rack to cool off completely. Enjoy for breakfast, snack or a healthy dessert!

Notes

  • Store: Store in a cool dry place open. Do not wrap or place cookies in a jar. The more air, the better. That way cookies do not get soggy. Remember there is no sugar.
  • Freeze: In an airtight container for up to 3 months. Thaw on the counter for a few hours.

My Story

I grew up in Ukraine on mom’s and grandma’s real food. As a student and young wife, I didn’t cook much and can’t even remember what we ate. Most likely, junk…

In 2011, I ended up at home with 2 small kids, unemployed and a wee bit chubby. I started working out and realized I need to learn to cook proper meals to keep us all alive and healthy!

That’s how iFoodReal.com was born. My food philosophy in short is – eat real food, higher in protein whenever possible, move daily and enjoy all good things in life in moderation!

Education

In 2022, I have successfully completed Nutrition and Healthy Living Program with Cornell University and got my certificate! Yay!

It was interesting to learn about human body, what nourishes and damages it. To understand what is a myth and what is true in today’s world when we are bombarded with so much information.

I also hold a Business degree in Accounting from University of Calgary and used to have a real estate license. Obviously, I was making my mom’s dreams come true and then some of my own wild ones.

  • My husband’s name is Alex and he is from Russia. We get along most days.
  • I moved 11 times in my life.

  • My boys are now 18 and 14. They eat everything I cook and don’t care about junk food. Mission accomplished!
  • I never had a dog until 2022 and now I am obsessed with my 2 year old goldendoodle, Karma.?

  • In 2024 I stopped drinking alcohol and never slept better.
