Pasta Aglio Olio

Ingredients

500g spaghetti
200ml extra virgin olive oil
6 cloves of garlic, chopped, 1 medium brown onion
1 tsp dried chilli flakes, or to taste
Salt
Pepper
1 bunch flat leaf parsley, finely chopped

To serve
1 lemon, zest
Parmesan cheese

Method

Cook pasta to packet instructions in boiling salted water. 

Heat garlic and onion in extra virgin oil gently over a medium high heat, until they become soft. Once the garlic begins to colour add a few ladles of the pasta water to the pan to stop it from cooking. 

Add pasta and parsley to the pan and stir through the sauce, season well with salt and pepper. 

Serve the pasta with parmesan and lemon zest.
