Air-fried Turkish feta rolls

You can thank your air-fryer and the easy and delicious Turkish cuisine for these feta rolls. Crispy on the outside, with a tangy filling… This snack is well on its way to becoming your new favourite recipe.
They take less than an hour to put together, and the filling in these rolls is so simple - just feta! You can customise it by adding a little crushed garlic, finely grated lemon zest or chopped herbs. You could replace the dipping sauce with a simple drizzle of honey, or even though it is not at all traditional, some sweet chilli sauce which would complement the salty feta nicely.

INGREDIENTS
10 sheets filo pastry
200g feta, crumbled
200g plain yoghurt
1 1/2 tbs fresh (or 1 tsp dried) dill
METHOD
Step 1
Place 1 sheet of filo on a clean work surface. Cover remaining sheets with a clean, dry tea towel and then a damp tea towel (to prevent the filo drying out). Cut the filo sheet in half lengthways. Spray generously with oil (see notes)..
- Step 2
Place a level tbsp of crumbled feta at 1 short end of each filo half, leaving a 2.5cm gap on either side. Fold the end of the pastry over the feta, then fold in the long sides. Spray oil to coat the folded side sections. Roll up to enclose the filling in a neat roll. Place on a tray and cover loosely with plastic wrap. Repeat to make 20 rolls.
- Step 3
Preheat an air fryer to 200°C for 5 minutes. Spray feta rolls with oil. In batches, add rolls to the air fryer, seam-side down, and cook for 4 minutes or until crisp and golden brown.
- Step 4
Meanwhile, combine the yoghurt and dill in a small bowl. Serve rolls with yoghurt mixture.
Notes:
- The rolls can be assembled up to 4 hours before cooking. Cover and refrigerate until needed.
- You can brush the olive oil onto the pastry, but a spray oil makes it much easier to get even coverage and won’t tear the pastry. You can buy an oil spray bottle from the cookware aisle at Coles, and fill with your own oil.
- Leftover cooked rolls reheat beautifully in the air fryer.
